I’m too lazy to do a full reset of my phone, so I was wondering if there is a way to help me pinpoint what exactly happens when my phone freezes. I do have a decent amount of apps but non of those really run in the background (to my knowledge). I also do have a custom ROM so it could also be just a bug in it, but while the installation was still fresh, I haven’t experienced such freezes.

Would Logcat thingie be useful?

I agree -- try logcat and see if you can observe a correlation between log events and the freeze.

If you have to cut the power, there is a mechanism to pull the last log.
