Can we get a recipe? I’ve desperately needed one!

[–] SoonerMagic@lemmy.world 5 points 1 year ago

I use this one except I grill or broil the chicken instead.

I like the two sleevers recipe if you have an instant pot. https://twosleevers.com/chicken-tikka-masala/

It's not tikka masala, more of a Thai curry, but what I do is get a ton of onion garlic and ginger and maybe red pepper or something in the pan with sesame oil. A few scoops of curry powder goes a long way too. Then mix in a can of curry paste. Sizzle a bit. The trick is to use a can of chicken broth and maybe a cube of bullion. Then add your basil and a can of coconut milk. There's your curry sauce. Add a cup of lentils or some chicken and you're good.

Joshua Weissman has a decent one that our kids love! It’s a good base that you can build on.

I could seriously eat this every meal every day.

I've tried a couple different recipes and I can never get the sauce quite as smooth both in texture and flavor as my favorite restaurant.

[–] SoonerMagic@lemmy.world 2 points 1 year ago

I didnt this time, but if you want smooth texture, blend sauce and strain. I’ve done it before for butter chicken and it turned out very smooth.

One of my go-to dinners. Never as good out as homemade.

[–] yukichigai@kbin.social 5 points 1 year ago (2 children)

Yeah but getting it out means you don't have to frantically clean the tumeric off of every surface before it stains.

[–] fruity@lemm.ee 3 points 1 year ago

Pro-tip: put the stained item in direct sunlight

[–] bl4ckblooc@lemmy.world 2 points 1 year ago

And the restaurants always complain when I show up in morning but a bib so I don’t stain my clothes with the 5 different chutneys.

Did you make the sauce from scratch or use a jar? I've made it with a jar of sauce but I always like the idea of everything from scratch.

[–] kamikai@lemmy.world 4 points 1 year ago (1 children)

I made a Tikka Masala from scratch this weekend! It was surprisingly easy, and shockingly close to the real thing. I followed this recent video by Brain Largerstrom.

The spice mix was just cumin, paprika, curry powder, garam masala, and chilli flakes.

From scratch. Easier than you think.

I use this recipe except I grill or broil the chicken instead.

My mouth is watering now, this looks awesome. Can you post a recipe? The sauce consistency looks perfect.
