Thanks for the suggestions. I haven't heard of a few of these! What's galangal, mace, and fenugreek leaf?

Galangal is almost ginger,harder to cut milder flavour. Mace is nutmeg skin, milder, more expensive. Fenugreek is โ€ฆ great for Indian food. Dunno how to describe it. Background thing that is good?
