Disappointing comments will generally be left to fester in ratio, outright horrible comments will be removed.

Why paper? Why not just use the leaves?
And instead of pasteurizing it and adding a bunch of chemicals, we just let it sit and develop on its own? Naturally fermented like everything else that tastes complex and amazing?
