I wonder, if you're not harboring any immigrants and ICE is breaking open your door because they suspect you do, is it morally OK to start shooting to defend your home? How would you even know it's not a burglar?

At this point, I think it's okay to start shooting even if you know it's ICE. Corrupt secret police that can't get a warrant fall into the home invasion category.
