Well, I got that mail too and I also use a 1€ server of ionos, but the mail only mentioned the price of plesk.
When I looked at the service page plesk wasn't lizensed. So, are your sure you lizensed plesk? Because my usecase is fairly similar to yours...
Or did I got something wrong?
No, I also got the mail and it stated pretty clearly that they only increase the price of the previously free plesk license to 5€. If you don't use plesk (aka don't have a license as you described), the VPS will still cost 1€/mon.
