I'm going to probably start a fight asking this, but is this show a need to watch with subs, or is it okay with dubs. (If I watch things before bed I usually can't read the subtitles on the tv in the bedroom)

Frieren has such such an ambient vibe, and the Japanese voice acting is a big part of the aesthetic IMO. I have not watched the entire dub, and from what I have seen so far it's pretty good, but the original audio is a masterpiece.
It has rewatch potential though, so if you gotta watch the dub it in bed with headphones then it's still fantastic, but at some point I'd definitely say it's worth watching it in the original Japanese. Fuck anti dub elitism in general though.
The CR one though. There is a 2nd NF dub (at least for S1) and that one is quite bad.

The English and German dubs are both great. No subs needed in my opinion.
I usually really don't care about the people behind the show, but Mallorie Rodak (Frieren in the English dub) nails the role and she now stands out to me. I now recognise her in so many other shows. And the rest of the Eng cast is also great.
Fern and Stark are hilarious in the dub
Personally, I only watch dubs if its an action anime that I want to see the action when they might be talking. Like mecha anime. Personally I haven't seen Frieren, but maybe this is something you can consider to make your choice.
