My dad's computer monitor is a bit too big for the seating distance, so I made the bottom task bar not hide, and added a big left side panel full of widgets, that way his maximized windows don't use the full screen. Full screen video is still the full monitor.

On my laptop I set the window behavior to open new windows as maximized. (I can always do super+arrow to quickly shrink a window for multitasking)
