i think visible scurvy symptoms don't set in that fast, but i still notice myself being less fit when i don't eat vitamins even for a single day.
What does that even mean, not eating vitamins for a day? They're kinda hard to avoid. Are you talking about skipping a multivitamin or something?
I haven't heard that such direct vitamin sensing is a thing. At most I've heard of people getting appropriate cravings when they lack a vitamin, and I'm not even sure whether that's just anecdotal or an actual effect. Which vitamin do you think you're sensing after just one day?

Edit: To be clear, I absolutely expect OP to feel like shit even if he could have as much ravioli as he wanted. This is far too drastic a change, and not a super gut-friendly one, and that is ignoring that he is starving himself with only a can per day. If he didn't return to a normal diet, he would definitely develop some lack of vitamins.
for example only eating nuts, bread and cheese for a day. no tomatoes, bell pepper, onions, lemons, etc.
i feel it mostly because my throat feels sore
