The main reason I haven't is that its cheaper to buy flour than grain. At least unless I am willing to order it in truly vast quantities. Found a couple of sacks of animal feed (barley) that are good priced but then delivery ruins any savings until you buy quite a few of them.

i've only done it once (i have a friend who insists her homeground flour is better. she's a good enough baker to know so i'm sure there's more than ego to her statement. she let me come over and try the equipment one day she was processing wheat). milling stuff just feels so satisfying. even just breaking out the mortar and pestle for spices makes a day better.

Flour could be considered a processed food not a processed garbage. But typical american bread for example would be called "bread for toast" in my country and is considered a processed garbage.

i discovered a couple years ago the reason i hated sandwiches growing up is i'm a bread snob and my mother used this awful potato bread

we have good bread here you just have to eat it when you buy it. i'll take you to my favorite bakeries (i used to be a bakery reviewer for a small periodical) and show you what you're missing. I'm not going to give you comparisons to any specific european food or location, i'm just going to tell you they're good enough i plan trips around eating at these places just because of their bread. i'm not defensive about bread at all i'm just hungry and looking for a good excuse to go to the pie shop in oregon.

I buy some good bread and some shitty shelf-stable bread because I feed 6 and I'm lower middle class. Good bread is awesome but like $15 a loaf. They're out here selling sliced half-loaves for $8. My wife and I both have two jobs so baking from scratch is not where I'm going to spend my time.

and i'm a shitty baker. there are four things i know how to bake. two specific cakes, pizza/calzones (they're practically the same thing) and empanadas. the "trick" for empanadas, or so i am told, is to buy your dough at the store. did i mention i'm a really bad baker. knowing how to do something does not mean being able to do something, and that's fun.

True, more people making bread is good. That happened here during covid, they started to run low on bags to put flour in and some improvised with alternative bags. We had enough flour but a lot of people started baking their own baked goods instead of buying baked goods.
