Mole is a very versatile sauce that can contain fruits, nuts, chilis, and spices, (even bread or tortillas to thicken it up) the star ingredient being chocolate. It can go with many things, in this case chicken and rice. A very traditional dish, from central/ south Mexico.

It is a damn marvel. It has so many flavors and still recognizable. This one looks very dark, probably high in chocolate, but mole can be found in many colors and hues, mostly green and red (this surely is dark red) depending on the chili combination. In Mexico, each gastronomic region has its own style, being particularly famous in Oaxaca, Puebla and the central region State of Mexico and Mexico City.

If you want to try it, please be aware it can be very spicy (though, some mole can be sweet), and if you have allergies, ask for the detailed list of ingredients, because it's a very complex food.
