i would really like to use hardware similar to the original devices the games im emulating were played on. like i'd love an open source gameboy that i could load my favorite emulator and games onto. does this sort of thing exist or would i have to build my own

You'd need an FPGA(s) and the knowledge of the chip set.

I think there's actually something like this specifically for gameboys

I was figuring id be able to assemble essentially a very small and minimum spec pc in the shape of a gameboy that could run an emulator through linux or windows. The link you provided will more than suffice though, thank you.

You might also like the ODROID-GO devices. They're a little more "real computers" than the "emulation consoles" you can find on AliExpress.
