Wasn't Magikarp canonically tasty as hell? I'm sure that was either in the anime or one of the Pokédex entries.
The opposite. Magikarp is completely inedible, because it's scales are too tough to cut. This would explain why they are so common in spite of being so weak, since eating them is nearly impossible.
The theory goes that pokemon don't look like things, things look like pokemon. So in that universe, ice cream was created to look like the ice cream pokemon.
And the sun was created to look like Solrock. 👍
