I recently came across a Japanese animation and love the way it looks and want to replicate the shader style and animation style

if you want to create it in blender then there are youtube tutorials. Look for gibli anine style in blender. I think thats what you looking for. I too don't know too much abt it. Love to create something with that style.

Not sure how broad your question is, so I will answer the broadest possible... You want to look into Cel/Toon shading.
