Just wondering.

Are there minimalists here who tailor the distro used to their pc or sbc? Custom kernel. Swap default programs for simpler ones. That kind of stuff.

Are there examples of someone using (for instance) buildroot to create a custom 'distro' as daily driver?

If so. Curious about the technical details but also the 'why?' question.

I'd say you're looking for a word other than "minimalist". Maybe "modder" or "tweaker".

A minimalist doesn't necessarily have any interest in spending hours making their computer 0.01% faster.

All the time. Mostly on retro handhelds that run linux.

There are distro, even user friendly ones, that follow this philosophy.

For SBCs I can recommend DietPi. It is extremely minimal and optimized for SSH/CLI based management with no extra bullshit. That being said they have excellent defaults and very well developed, spartan yet highlight optimized tools for system management.

I would go as far as arguing that true minimalism is not about tailoring your SBC/computer, but having a system that's really focused and with a defined vision.
