One sandwich more traditional. One with olive loaf and hummus instead of mayo. Tomatoes home grown.

Chip dip made from sour cream and beefy onion soup mix.

Cost per person $5

Cucumber. It has replaced lettuce for most of our lettuce needs.

That was a post hoc bonus. My wife thinks cucumber is a food group. It's cheaper than a head of lettuce. It's more flavor than iceberg. It can be stored at room temperature.

And yes. It's less likely to be a vector for food poisoning. But that is incidental.

Nice. My wife started making a spicy yogurt cucumber salad for her post-workout snack. It's very tasty. I can see it being a good lettuce replacement for almost everything, but salads I would miss the lettuce.

Salads was the first thing we tossed. We like peasant salads, which are lettuce free. Using cucumber in salads was easy. Except for Caesar salad. That one needs romaine lettuce. But 30% cucumber works really well for that.
