You have seen the bean salad before. Cost per person $1.38

Sandwich: homemade bread grilled on both sides with mayo, turnip greens from my garden that wilted, rehydrated shiitake mushrooms I toasted, salt, capers, lemon juice, olive oil, and a bit of smoked jack cheese. Cost per person $1.8

The sandwich was an improvised experiment and it is awesome.

How do you rehydrate your shiitake mushrooms? Mine always come out as infinitely chewable rubber, not good for a sandwich.

Bring to a boil, let rest for 20, slice, squeeze out all the loose moisture through a cotton shirt rag, then sauteed in olive oil until they started to brown.

I know the texture you are thinking of and that's why I put it through the extra steps. I figured the slicing and then saute would break any long fibers and the wringing out would get rid of enough moisture to allow browning. It worked great so that I didn't have a single rubbery bite.

The bread; spread with mayo and seared on the griddle?

[-] FauxPseudo@lemmy.world 2 points 19 hours ago

Correct. But in this case, I grilled both sides of the bread.

Is that honeydew in the salad?
