Simple food is best food (literature.cafe)

My family left earlier today for a vacation. I'm on my own for the first time in forever. No way I'll cook elaborate meals for just me--we cook every meal from scratch, I want a break.
Tonight I'm having leftover rice sauteed with coral lentils, fermented zucchini+coriander, fermented garlic+onion, toasted coriander seeds and ground cumin.
It's lovely. The pop from lactofermented veggies works so well with lentils.

Ideas for no-hassle healthy meals for the next 14 meals, please?

I married the pickiest girl west of the Mississippi. If she happens to be gone for an evening, I usually cook Chinese or something spicy.

Lentils cooked in coconut milk and curry are so good, and has some extra calories from the coconut milk, if you need that. Add any veg you have.

Breakfast for supper.

Leftover noodles fried in chili garlic oil. (I guess not healthy but easy and delicious)

You have a lot of fermented pickles? Chop and put in a grilled cheese sandwich!

I like complicated food but yes if you have glorious condiments, as you seem to, you've already done the complicated part. Pile those fermented veg on brown rice and that would be so good just by itself.

Dear Lord grilled cheese with fermented veggies. It's heaven. My favorite is summer squash, but anything goes. I have artisan bread made by a crazy baker who has his own cereal fields (and works with cows, not 20th-century machines)--he's awesome, and cheese from the goats I see wandering the forest through ly window. Bliss.

(I had dhal with fermented tomatoes for dinner. I'm a happy woman.)

I like the fermented ideas you mentioned.

Lentils can go to the lowest part of hell.

When I get there, more lentils for me, nice!

[-] myyass@lemmy.world 1 points 1 day ago

Hah. Enjoy. I can't eat them, I actually get sick.

You have good taste. When my family is out, I go between instant ramen or similarly easy to crazy experimental things my family would possibly not tolerate , if the experiment goes wrong. (Over seasoned, spicy, etc)

I lost a lot of weight, and I am so happy. This is my go to. My default meals for the next couple of months and currently go like this.

Breakfast: Eggs + Sardines (when I have them) + Barley mixed with blueberries and kefir.

Lunch/Dinner (1 of the 2): Sardines (when I have them), stewed chicken (thigh or breast) with greens (spinach) made with either birds eye or jalapeno chillis + buttermilk with blueberries for dessert.

I just got off lentils which I was on for months after the bloat/gas became too much to handle. Simple food rules.

Thank you for the sardines. I'll get some fresh sardines and grill them with fennel. This year was so hot and dry we got almost no blueberries though, and it's very sad.

Something so simple I always crave when I'm unwell.

i always tell myself this. i crashed my bike during a race, and was like “i’m gonna make a slop bowl of mac n cheese and tuna.” but… i can’t just put the tuna in with the noodles; even if it’s canned i can still sauté it in some garlic and butter. may as well add some of this togarashi for a little heat. and everyone knows mustard makes cheese taste cheesier. speaking of cheese, i got some parmigiano regiano. let’s put some of these green onions on top; first bite is with your eyes. and of course some panko will add a textural contrast…

Canned chili is the superior box mac addition anyways.

Speaking of lazy meals... Put a can of chili and a block of cream cheese in a pan over low to medium heat. When it's all combined, you have a creamy chili dip to eat with chips.

Veggie stir fry with whatever you got; bell peppers, jalapeno, carrots, throw some nuts in instead of salting

Butter noodles with some vinegar or something that's got vinegar in it (hot sauce, mustard, light salad dressing, etc) or go creamy sauce noodles with some mushrooms sauteed then mixed with a little stock and cream

Lettuce or leafy veg, shredded cheese, hard boiled egg, carrots, chickpeas, tomato-based dressing salad

I just made hot sauce. You mean it works with noodles? I need to investigate...

Tabasco works with mac and cheese

Can use those coral/red lentils for dal. Basically just cook the lentils (+ occasionally stir) until they've disintegrated. Can eat with bread. You can also add spices and veggies as you feel like, although the lentils themselves are surprisingly flavorful.

I just made dal, thanks! It's so good.
