I just want to quickly say: You cannot permanently brick your PC with Linux. You may break your install, but you can just reinstall. Doing actual hardware damage is near impossible.

It depends. Packages from your distro, likely will work with no issues, but there is always the possibility that something gets shipped broken (which also exists for windows). Steam games, is generally good, and getting better all the time, but there are some games that definitely won't work out of the box (or at all). Check your games: https://www.protondb.com/
To reiterate, it is impossible to do hardware damage, so you can always return back to windows if you decide its not for you. Maybe you'll love Linux, maybe not, but its very safe to try.
At least for paperless, one of the selling points is OCR plus text search. Do you can dump in all your receipts as photos, and then 3 years later, search "lawnmower" and find the receipt for it. (I dont know if this applies for this software, but its very nice in paperless)

This is a bit of a "how long is a piece of string" question, security is multifaceted.
From what I understand, it uses your phones kernel, so if its out of date or vulnerable, that might be a problem, and you may not be able to fix that.
Conversely, its running inside android, so the android hardening might make it more secure.
What are you specifically concerned about? Firewall? Zero days? Antimalware?

Using money as a gate has some issues. If you don't scale the amount to the region, you effectively exclude that region. But if you do scale to the region, it encourages the spammers to simply setup their operations (either physically or virtually) in the cheapest region (physically also has the benefit of cheap labour).
Requiring unique credit cards could mitigate that, but then there is PCI issues there, and its basically no different to requiring ID.
