Self hosting search engines is very hard. The scraping, indexing and storage requirements are immense. You could definitely self-host a front end (with your QoL improvements), but the back end search engines (Bing/Google/etc) will be able to track you all the same.
The myaddress+shop@gmail.com should be trivial to defeat by a spammer. Its a very simple string remove/replace to get back to a stock email address, or change it to impersonate another service, eg. myaddress+netflix@gmail.com.
It's only useful for the actual service, after that, you can't rely on it.
My company does a mix of scrum and kanban, but its all pretty loose. I suspect its actually very rare to find any of those development models being followed strictly, once you leave uni you'll end up doing whatever the company/team you join does.
I can't remember exactly what its called, but something like ~~router~~ NAT loopback is what you want. I'll have a look around. But if you set it right, things should work properly. It might be a router setting.

Not the person you asked, but i have a mitsubishi electric heatpump, which i have hooked up to homeassistant via an esphome library. It has a header on the controller board that you can connect to.
Normally the header is for their $200 controller and app, i spent $10 on the parts.
