So it's only taken 2 hours to get the smoker to a stable temperature, remind me why I do this to myself again?

Nah, this is just another experimental cook. I'm trying to learn a new skill and add a twist at the same time.

My mates hate that I do this and don't tell them in advance though lol

Beef short rib with a Jamaican jerk sauce from the UK, and beef brisket with a BBQ sauce from North Carolina.

Today I've also done a BBQ with burgers, mushrooms, sweet corn, zucchini, capsicum, meat skewers and probably more that I've forgot because the brisket still isn't done :/

No guarantees there as I'm experimenting with different marinades :/
