I like to serve raw veggies (cauliflower, carrots and cherry tomatoes being my usual go-to) with a squeeze of lime juice and red pepper flakes to top like a dressing
Lime cremas are good for topping a lot of Tex-Mex type dishes. 1-2 teaspoons of lime juice to 3 Tbsp of a vegan yogurt or sour cream. Speaking of Tex-Mex, I really like a squeeze of lime in black beans.

Thank you! Some great suggestions. I forgot I used to make a lime cream sauce for tacos, I will have to find that and try it with vegan sour cream.
The Thai peanut sauce sounds great too.
