I used to do kombucha, water kefir, dairy kefir and sourdough. It does take time and I ended up buying water kefir and kombucha concentrate for the soda stream instead.
Top tip: never leave kombucha in a closed container and forget about it. After about 20 days the pressure built up so much that the glass container exploded, sending glass into a wall 15 metres away.
Wow! I have never liked kombucha so have no plans to make it, so I guess my bottles and walls are safe.
I've heard people say they never liked kombucha until they tried a particularone they liked, but I think it's probably not my thing.
