I'm an admin in our own instance (mujico.org), I have seen some posts that need the NSFW tag but I can't find a way to put that tag, There are some posts that are not NSFW and I would like to remove that, that's it.

You can’t. You have to ask the original poster to fix the error. If they don’t, you’ll have to delete the post.

Maybe, but I don’t think anyone should have control over modifying your post beyond deleting it.

I think limited control like flairs and NSFW tagging are fine. As long as they can't modify the content of the post.

I remember looking into it back when lemmynsfw was brand new and flooding all with un-nsfw'd porn and the devs seemed to be explicitly against giving mods the ability to edit posts, which NSFW tagging kinda falls under.

I totally get not wanting to let mods or admins edit the content of a post. I fully agree with that. But NSFW tagging could be separate from that. That and if post flairs get implemented, mods should be able to add those as well.
