I think the communities we currently have could do with more content. You could start posting outdoor related content in the newzealand community for now and if/when it gets to crowded then start the discussion of splitting it out?

Could do, the posts would still show up if you sort by local though.
There doesn't seem to be a lot of demand, I think the suggestion to start by posting content in !newzealand@lemmy.nz is a good one. This was people subscribed there will also see it. Our existing communities are not exactly overrun with content yet.
I've just posted a video now actually.
Do note that some people could have accounts on other Lemmy instances but subscribe to !newzealand@lemmy.nz. Those people won’t have access to the local feed for lemmy.nz
Don't be afraid to spam c/newzealand with content! The server is still tiny, no need to split stuff yet I think. c/newzealand is a good place for any general-interest posts that are NZ related, including your youtube vids.
How outdoors?
I have !nzwildlife@no.lastname.nz on my instance, would be happy to do others of that sort. I'm setting it up for more of that type of community rather than pure social
I'm thinking of something aimed more at outdoor sports and activities, less on the wildlife.
Are you thinking tramping/hunting/alpine/kayaking/mountain-running etc? They all cross over a little in outdoor space they use, but at least in my own personal experience the people involved in each of those usually tend to have their own very distinct interests in what they like to discuss. YMMV, of course.
That's the idea, yes. I've found people tend to be multi disciplinary to some extent, kayakers will often do whitewater as well as ocean paddling, and I do know people who also to tramping etc.
This would be more to discuss trips and scenery in terms an outsider can understand.
One of the other NZ Lemmy instances is having a more nature/outdoors focus, and I noticed they have a community !outdoors@no.lastname.nz. This might be a good place to put that content? No content yet but I'm sure you can change that!
If I can have some others chime in with their support, I can set this up. Especially if you're willing to provide content!
I've posted my YouTube videos to r/wellington before, which was quite well received, I might use a different username that references the channel though.
