I'm a simple man. I do a lot of rice and beans with random spices for dinner, and oatmeal with peanut butter and sometimes fruit for lunch.

Sometimes I get fake-burgers, which are tasty and super easy in the air fryer, but aren't nearly as cheap.

There's lots of other stuff out there. What do you like that's the best intersection of fast, easy, cheap?

I try to eat better when I have the time, but when I need something filling that takes five minutes and doesn't cost much, I open a bag of instant ramen, boil it in water with the spice pouch it comes with, two handfuls of frozen vegetables and some soy chunks or beans.

I love tofu bowls with rice and quinoa. Tofu air fried, rice and quinoa cooked in a rice cooker in the same pot. Then random veggies to complement the sauce.

Those are some great options! My usual regimen is as follows (more-or-less):

  • Breakfast: Oats with blueberries

  • Lunch: Cashew butter sandwiches with chocolate almond milk and a fruit

  • Dinner: Pasta bolognese using TVP and nutritional yeast along with spices to taste (with a side of veg & bread) ♡
