Not a vegan but climate change is going to interrupt tf out of livestock supply chains. So while I don't see a lot of people "going vegan" I do see a lot of North Americans especially, reducing their meat consumption drastically within 20 years. Ideally we would replace those supply chains with at least sustainable options if not plant based ones.
Due to the high price of beef I have not bought it for over three years now. I have lost the taste for it because it has been so long. Never would have thought ground beef would be more expensive (I have seen it $8-10 a pound) than a T-bone steak back in the day.
I lived in Turkey a couple of years and found that I didn't miss pork products the way American culture and marketing implied I would. Then I realized that giving up a lot of other products wasn't such a big step. Like, i now think solidarity with mammals is a good thing, and it's way less of an adjustment than I thought. Plus being healthier and saving money is always fun.
The price of meat will force people into partial vegetarian/vegan diets rather than an ethical dilemma. If the climate doesn’t kill the animals, the economy will

I genuinely don't think there are that many conscientious people on this planet.
Prediction is very hard, but if we're talking about centuries, I could see it happen.
There was a growing vegan trend a decade or so ago, but I think that's subsided largely because of political right-wing, conservative trends but also because people care less about ethical issues when they are struggling with basic needs and global political turmoil. If the future leans back towards the left, veganism might trend back.
Climate change might be a big factor in moving away from industrialized animal farming. it's just so inefficient. I also feel like it's becoming more popular to reduce meat consumption at least, so I could see people cutting down significantly while not adopting a vegan or vegetarian label. Dairy is a tough one though, it's much more ingrained and normalized.
People forget that we already have examples of societies like India that are largely vegetarian. If we already have a success case, I don't see why that can't be replicated globally. India fell into it through a cultural and religious accident, but I think the mindset can spread just as well in other countries, so it's important and worthwhile to keep changing peoples' minds and normalize plant-based lives.
Thus I don't think centuries because I see what we have collapsing in centuries. Which means people suffering which means people caring less and trying to survive.
Yes, I would think for everyone to be vegan or even vegetarian it would need an enlightened society with so much available excess that no one is left at the fringes, or such a small population living in the desolate ruin of the world where humans are the only meat remaining.
No and if we do not for long. Why I don't expect this whole thing to last centuries and there well became collapse.
