I removed the packaging from all surfaces I can access without disassembling the stove.
Our airfryer took about a week of daily use.
Does I have a cleaning cycle? Run that.

I might be careful before using the self clean. I think it depends on how the self clean functions but I've seen a couple posts over the years of people recommending against using it. Some just lock the door and crank the temp to a higher than normal amount and it can stress the components or people have said it cracked the glass door.
Yes, that's what that usually does, burn all the residue to ash. I use that on mine every month or so, no problems since 2021. I usually just wait for a day where weather allows for an open window during the process.
If not set it as high as possible for 5 hrs. I think my clean cycle takes it up over 550 *F for that long.

To "season" your oven, just cook a cheap frozen pizza directly on the rack. Some cheese will inevitability drip and burn, giving it that classic oven smell.
Grab a priest and ask for an exorcism if its sulfuric.

Mine took a week or two. Cook food in it a few times, that seemed to help.

Did the air in your kitchen change during that time? The offgassing works better when the air is changing, such as through a ventilation system or an open window.
It's a pretty nasty smell, so I have all the windows in my house open (two in the kitchen) and the kitchen exhaust fan running.
Might help to aim a fan into the open oven periodically for a few minutes at a time. Besides heat, you want airflow in there to accelerate the rate of dissipation.
The smell isn't coming from within the oven. It seems to be originating from the cooling fan that keeps the stovetop from overheating.
We kept ours either off with the door open or on with the door shut for a while. The smell was terrible and it made my throat burn. I also had my doubts. But it eventually lessened and went away completely. Fans and open windows help, if the weather permits it.

Here's a thought: clean the surfaces with some diluted white vinegar and heat the oven once more. The vinegar will not smell nice either, but it may clean up any residues that may cause the smell.
What brand did you buy if I may ask? I bought a new oven 2-ish years ago. The smell was there, but it was not particularly bad and the problem sorted itself quite quickly.
I know what you are talking about and did have it awhile but it did seem to go away quick enough that I have forgotten about it.
Ours took a couple weeks. We left it running in cycles for a few hours at a time with the windows open.

I have asthma. It took 2 days to become tolerable (i.e. the kitchen is no longer a biohazard), and 2 weeks to go away completely. But I'm extra sensitive to gases and stuff; my partner at the time didn't even notice
