In terms of sea shanties, and I'll be the first to say for a 40 year old my taste in music is.... Eclectic to say the last, but there is a recording out of the 60s that is the quintessential collection of sea shanties and it is absolutely amazing.

One time in high school this girl came up to our lunch table and said "isn't it funny how white people have no culture?" so I looked at the only other white guy at the table and sang the first line to this song, and then he sang back. Also, if anyone claims that something is a "white culture thing," then suddenly they're racist.
If you don't believe me, just show up to a multiculturalism group and try to celebrate Irish culture or mention being proud of your irish heritage. They'll assume that makes you a white supremacist and chase you out.

Started for me with Muppet Treasure Island, then reinforced with Assassin's Creed Black Flag.
I just happened to create a "sea" Playlist, mostly consisting of Barrett's Privateers. Thoughts on the flavors:
I love singing along to Twiddles, by Misbehavin' Maidens. It's less of an "at sea" song, but rather is sung from the perspective of the women who love sailors, and who are left behind when they go to sea. It's very fun and gay.
