I wonder what Iran would be like if it still had its democratic government before the U.S. and U.K. orchestrated a coup in 1953 that installed the Shah for the crime of nationalizing their oil industry. Iran was on a path to democracy and the US undid that and installed an authoritarian leader.

Right, but the people running Iran right now are the result of the US interfering explicitly to combat Iran's socialization of their oil. Which reflexively led to the Iranian Revolution and the current Islamic Republic. The current regime would not exist without US interference. Al Gore and Bernie Sanders suffered domestic interference, not foreign.

You could also say Iran's pro-democratic people and socialists suffered a little bit of 'domestic intereference' when the islamists started killing them off after the revolution

We will never know and that's not the reality of today. Useless to speculate about, the regime can convert to democracy and stop oppressing its citizens any day they want, but they won't.

They tried that already. Where did it get them?

If you think the US would lay off the attacks at all if Iran was more democratic, you're delusional. The last thing the US wants is for it's prospective resource colonies to be democratic. Because democracies tend to insist on getting a fair deal for their resources so they can reinvest the money on development. Far better to install a military dictatorship that depends on foreign backing and in turn suppresses the people into compliance, while the colonizer steals their resources. Which is exactly the system the US installed in Iran and kept around for decades.

At this point, the US mostly just wants Iranians to suffer (assuming subjugating them again isn't on the table), because they had the audacity to overthrow their puppet and they don't want any other colonies getting any ideas.
