For cheesemongers in the United States, these should be creamy times.

“The Big Cheese,” a documentary about mongering, opens at the IFC Center in Manhattan next month, bringing the arts of slicing, wrapping and spieling great cheese to the big screen. Last year, the gold medal at the Mondial du Fromage, a biennial cheesemongering competition in Tours, France, was won by an American for the first time, the culmination of the home team’s decade-long quest to gain the respect enjoyed by European mongers.

There are reasons to celebrate on the public-health front, too. A wedge of cheese reigns in glory near the top of the newly inverted food pyramid the federal government put out in 2025.

Few mongers are cheering, though. They are deeply anxious about the future of their profession.

A chaotic barrage of tariffs and a war in the Middle East have driven up the prices of many cheeses, both imported and domestic. Grocery chains increasingly stock grab-and-go hunks of cheese vacuum-sealed in plastic, slashing jobs for mongers and selling at prices that independent counters can’t match. Smaller stores have trouble finding bright, curd-curious young people who will take minimum-wage pay or just above it to work on their feet all day caring for dense wheels streaked with entrancingly pungent blue mold and luxurious triple-cream rounds that drip like honey.

TL;DR: artisanal cheese is too expensive; artisans surprised that minimum wage isn't attracting workers

Also people have no money for luxuries anymore. That is what happens when billionaire parasites suck everyone dry.

There's also been a good job stateside of hiding the fact that the dollar has gotten weaker for decades. Some of the cost of an imported cheese can be tariffs, but when the dollar loses 50% of its value against the Swiss franc, Appenzeller is going to become more expensive.

Easy enough to hide for the USD given that it's pretty much what everything else is compared to.

Oh no, USD isn't weaker, it's just that CHF just got stronger.

Gold would disagree. That's not a full forex explanation of everything, but about the time gold hit $5,000/troy ounce, selling my inheritance at $285/oz in the '90s for a ski vacation started to look short-sighted.

So many people in the NYT comments angry about the assertion that everybody loves cheese, but I certainly do. Shout out to every underpaid cheesemonger slicing me off bits of their favorite cheese so I can nibble mouse-like at it...reading this has inspired me to go searching for some truly good local cheese places. Thanks for posting, Powderhorn!

It's the sort of thing we've been dealing with for years in newsrooms, and the display copy here violates a hard rule: Never claim universality. In the '80s, you could say "everybody likes pizza," and it was accepted as "most people like pizza." But now it has to be a production. "Celiacs don't!" "The lactose-intolerant don't!" "Vegans don't!"

Which is all well and good, but really? On no world did anyone on the editorial chain think "well, this will piss off vegans." But I suppose we're predisposed to pizza. How else can we tell it's election night?

I was surprised at the number of people in the comments who, neither vegan nor lactose-intolerant, simply hate cheese. A truly vocal minority (though, as one person launched in to defend with specific statistics, clearly not an insignificant minority).
