I don't do squash or zucchini myself but I'll be damned if that doesn't looks delicious.
Have you tried from fresh? If you have, no worries - everyone has the right not to like things (I can't eat raw onion or raw bell pepper, only cooked to smush) - but if you've only had from like frozen or something - thickish slices of zucchini and yellow squash cooked on a griddle (or skillet) in a bit of butter with some salt, msg, fresh ground pepper on top - don't have to cook to mush, only until it gets a little bit of colour and gets a bit soft - I think that's damn tasty.
Don't worry if it doesn't tempt you to try it, I'm not trying to argue you into it in the slightest. But if you've only had canned or frozen, that's one where fresh makes a big difference. And while I also grew up on yellow squash sliced thin and satueed with onion and bacon, I wouldn't recommend that one because you do need to cook the squash for a good while, so I'd imagine it would be in a state you wouldn't like it as much.
I like squash soup. I LOVE zucchini bread. It's the texture that gets me. Same with overly pickled peppers. Makes me gag. Love hot peppers but some foods presented in certain ways I can't vibe.

I often do this when my wife gets chicken breast on sale from Fresh Market - good quality chicken, so I slice into medallions and saute in butter with some sort of seasnons, make a pot of rice, saute zucchini and squash, and it's an easy and satisfying meal :)
Not everything has to be, like, Michelin star to be legit good eats. First of all, is it tasty? It's good eats. heh.
I know you're not presenting this as shitty food, but still, I think that title is unfair - that looks legitimately tasty.
With my health these days, I've had to greatly simplify. One of my recent "innovations" - can of chili beans, butter, cheese powder (like mac'n'cheese - you can buy bulk poweder on amazon or other places), over pasta or rice. Last time I made it I put in some drained canned corn. It reminds me of chili mac, but it's a bit healthier. And while I'm an omnivore, I do like having some meatless meals, and honestly? It tasted great. (pasta was better than rice imho, and the first time I made it I didn't think about the cheese powder and it was still quite tasty)
So don't sell yourself short on how you think about that - it looks good!
There is a restaurant in Toronto called Conejo Negro (Black Rabbit) that got a Michelin recommendation a year or two ago. Not a star but still mad clout. Their plating is much closer to OP's than the assembled-by-tweezers visual art projects people associate with haute cuisine.
I'd rather eat OP's plate than an algorithm🤣
